Pesach's most noticeable restriction on our dietary lifestyle is that of restrictions on leaven. The whole house must be cleared entirely of leavened products before the festival - often they are sold to neighbours or given to charity. The ritual for this leaven search involves a thorough search of the household, traditionally with a candle in one hand and a feather to clear away the dirt in the other. As children, we are normally told that we do not eat leavened products because the Israelites did not have time to bake their bread properly as they left Egypt, although more truthfully it is commanded that we should not possess any leavened products in Exodus 13:6-7. Instead of bread, therefore, we eat unleavened bread called matzah. We must also ensure before the festival starts that all crockery and cooking utensils are entirely clean.
