The Havdalah service rounds off Shabbat, and welcomes in the new week. Instead of the white candles which are used in the Shabbat service, we use a blue and white plaited candle, which is traditionally held aloft by a young child (some say to the height they want their future spouse to be). A beracha (blessing) is recited over some spices (to symbolise the riches of the Sabbath), then over the wine. The celebrants cup their hands around the light of the flames, to separate the old week from the new. Finally, the candle is doused in the wine, and the celebrants wish each other a Shavua Tov - a good week.
